Its
a known fact that you cant make a silk purse out of
a sows ear, any more than you can make a delicious meal
from anything other than the tastiest, freshest ingredients.
As a chef and restaurateur born in Yorkshire, no matter where
I work I am totally dependent on the quality of the ingredients
I can buy. Local produce, sourced from people who care about
their product and in whom I trust, is always the best.
This beautiful little book is delightfully different from
so many of the food books on the market, in that it tells
the stories behind the real people who fill our larders and
fridges. To be the best, they have to be a little special,
and reading through these pieces and reflecting on the photography
we gain a sense of how remarkable and dedicated these people
are.
I hope you will enjoy Provenance as much as I did, and hope
the project will take one more step towards putting more quality,
local food on our dinner tables.
